  1.0 - Cucumber Juice

  0.75 - Honey Simple

  0.5 - Gin, Lime Juice

  Shake, Strain into Chimney Glass

  Garnish - Sliced Cucumber and Pea Shoots

“Meadow on a Runway”

   0.75 - Spring, Bourbon, Aperol, Lemon Juice

 Shake, Strain into Coupe

“Spring’s First Dandelion”

 

      1.0 - Gin

  1.0 - Dry Vermouth

  0.5 - Spring, Genziana Fernanda

  Stir, Strain into glass

  Garnish - Anchovy-stuffed olive

“Ridin’ Dirty”

  2.0 - Gin

  0.75 - Dry Vermouth 

  2 Barspoons - Spring

  3 Dashes - Hot Sauce (Verde)

  Splash - Caper Brine

  Stir, Strain into Coupe

  Garnish - Anchovy-stuffed olive

“Scarborough Fair”

   1.5 - Mezcal

  0.75 - Lime Juice, Pear Juice

  0.5 - Spring, Honey Simple

  3 Sage Leaves

  Small Bunch - Parsley

  2 Sprig - Thyme

  1 Sprig - Rosemary

  Shake, Strain into Coupe

  Garnish - fresh herbs

 

“A Little Rain Never Hurt No One”

  0.75 - White Rum

  0.5 - Spring, Lime Juice, Douglas Fir Liqueur

  0.25 - Honey Simple

  Shake, Strain into Coupe

  Garnish - Ground Hops, Sugar, and Malden Salt

“Haitian King”

  2.0 - Clairin Communal

  1.0 - Pineapple Juice

  0.75 - Lime Juice

  0.5 - Spring, Orgeat Syrup

  8-10 Mint Leaves (ripped & slapped)

  Shake, Pour into glass

  Fill more ice as needed

     *Pebble Ice works best

  0.5 - Brenninvin, Simple Syrup

  Shake, Pour into Collins Glass

  Top with Soda

  Garnish - Lemon Wheel
