Ingredients
- ¼ Cup - Candy Cap Mushrooms
- ⅔ Cup - Soft Butter
- 2 ⅔ Cup - Powdered Sugar
- 2 - Large Eggs
- 1 ¼ Cup - AP Flour
- ⅓ Cup - Cornmeal (fine or medium)
- 3 TBL - Amaro No.3 - Last Leaf
Instructions
Preheat oven to 325 degrees F.
Grind and soak the Candy Cap Mushrooms in 1 TBL of Last Leaf and set aside.
Generously grease and lightly flour a small springform pan.
Beat butter until fluffy, then gradually beat in sifted powdered sugar.
Beat in the eggs, then the flour, then the cornmeal.
Stir in the soaked Candy Caps and add another tablespoon of Last Leaf.
Pour Batter into pan and bake for 1 hour.
Cool 3 minutes and then turn out onto rack to cool.
Sift powdered sugar over the top.
Feel free to splash more amaro over cake when serving, and try not to enjoy….
