Ingredients

  • 1.0 oz - Amaro No. 1 - Grassy Eden
  • 1.25 oz - Agricole Rum
  • 0.75 oz - Lemon Juice
  • 0.5 oz - Rich SImply Syrup
  • 2 drops - Saline Solution

Instructions

Add all ingredients to a shaker tin with ice and shake vigorously. Then rub half of the Coupe glass with citrus juice and roll through the Moss & Dulse mixture. Then double strain into the rimmed Coupe glass.

* For cocktail rim, grind up Irish Moss and Dulse in a spice grinder (2 parts Dulse to 1 part Irish Moss). Once ground up and sieved through a mesh strainer, then add sugar to taste (just to balance the salinity of the other two ingredients).

With a gorgeous natural color evoking the mosses of our local rainforest, it captivates with notes of lovage and lemon balm with the freshness of pea shoots. Floating on a nose of spring flowers, it is anchored by a bright bitterness highlighted with Cascade hops.

"Grassy Eden" plays nicely with gin and other clear spirits. It also jives well with  citrus forward cocktails. Something as simple as adding soda and a slice of cucumber to Spiring could soon be your new favorite aperitif.
